It consists of potassium disulfite (preservative E 224): together with the acids in juice and wine it forms sulphurous acid, which kills germs and keeps the batch stable. Proceed the same way with wines that smell off (reductive notes). If the fruit is not perfectly sound or fruit mash is kept in hot weather, a light initial sulphiting with 1 g per 10 litres is recommended. One sachet is therefore enough for up to 100 litres.
