As L(+) tartaric acid (E334), it can be used in a targeted way to raise the acidity of grape must and wine when the batch brings too little acid of its own.

This tartaric acid is highly pure and comes in a 1 kg bag. The pack still gives the old limits of 2.5 g/l for wine and 1.5 g/l for grape must. Since December 2021, grapes, must, new wine and wine may be acidified by up to 4 g/l, expressed as tartaric acid (Regulation (EU) 2021/2117); at home it is best to stay at no more than 3 g of pure acid per litre. Measure the acidity beforehand, then you dose precisely and don't over-correct past your target.

Contents: 1 kg L(+) tartaric acid (E334)

Suitable for: acidifying grape must and wine

Use: according to the measured total acidity, dosage as per package instructions; for grape must and wine legally up to 4 g/l (the pack still states 2.5 g/l for wine and 1.5 g/l for must)

Brand: Arauner Kitzinger

Manufacturer's information:

Dosage: 1 g/l raises the total acidity by approx. 1 g/l and lowers the pH value by approx. 0.1

Typical total acidity targets: must 6–9 g/l, finished wine 5–6 g/l (Riesling 7–8 g/l)

Form: fine crystalline powder in food grade (E334)

Storage: cool, dry and tightly sealed

//cdn.shopify.com/s/files/1/1087/2468/3090/files/SKU-011644_17a7615e-6b52-46ad-800a-c723aae2d800.jpg?v=1784802548
