According to the packaging, Hayma Treibkraft is a raising agent for Lebkuchen and Pfefferkuchen, two names for the same bake. Its ingredients include baker's ammonia (Hirschhornsalz), which is traditionally used for Lebkuchen. When heated, it breaks down into ammonia, carbon dioxide and water vapour, and these gases aerate the dough.
The ammonia has to be able to escape in the process. That is why baker's ammonia is suited to flat bakes such as Lebkuchen, Printen or speculoos (Spekulatius), from which the gas dissipates during baking. In tall bakes such as cakes it would stay trapped and affect the taste and colour.
According to the packaging, one sachet is enough for 1 kg of flour, so the two sachets in this pack are enough for 2 kg. Your recipe will tell you when and how to add the Treibkraft to the dough. Hayma also makes the gingerbread spice mix Neunerlei.
