Tartaric acid (L(+)-tartaric acid) is the natural main acid of the grape. It lets you adjust the acidity of must, wine, sparkling wine, cider and mead, lift a flat taste and increase microbiological stability.
Measure the total acidity first, add the acid according to the desired correction and stir in thoroughly. As a rule of thumb, 1 g of tartaric acid per litre raises total acidity by about 1 g/l and lowers the pH by about 0.1.
