The Bordeaux dry yeast is a pure-culture yeast for orchard-fruit, berry and grape wines. It is especially popular for red wine and fruit wines because it emphasises fruitiness. It is suitable for white and red grape musts, but also for fruit mashes and mead.
At temperatures of 19 to 23 °C it delivers a high final degree of fermentation under good conditions, and its alcohol tolerance reaches up to about 16 % vol. To use it, let the contents of one sachet swell in a good 125 ml of lukewarm water and then add it to the juice; the temperature difference should stay small. The set contains three portions of 5 g each, together enough for up to 150 litres.
