Citric acid helps you specifically acidify low-acid juices, musts and mashes. Sufficient acidity gives wine and mead freshness and structure and at the same time makes the batch more stable. This product is pure, crystalline citric acid without additives and can be used in many ways, including for jams, jelly and preserves.

To use it, dissolve the acid in about ten times the amount of water and add it as needed. How much is required depends on the measured acidity of the fruit, so it pays to measure beforehand. Citric acid can irritate the eyes, so work cleanly and observe the warning notes on the pack. Store cool, dry and away from light.
