The Arauner Champagne sparkling wine yeast is a pure culture wine yeast for the second fermentation, turning a still base wine into sparkling or semi-sparkling wine. This twin pack contains two portions.
To prepare the starter, stir the contents of the sachet into ten times its volume of water at 35–40 °C and let the yeast rehydrate for about 20 minutes, at most 45 minutes; the pack still states an eighth of a liter of water at 30–35 °C and 2 to 3 hours, which is an older recommendation. Temperature management is key: when adding, the starter and the base wine should be no more than 5 to 10 °C apart, otherwise the yeast gets a cold shock and struggles to start; the 2 °C on the pack is stricter than necessary and does no harm.
Arauner belongs to the long-established company founded in Kitzingen in 1897, whose operations ended in May 2024; we carry on the original remaining stock.
