Lactic acid adjusts the acidity in the must when the base material lacks natural acid, for example with very ripe grapes from warm years or with low-acid fruit. It is considered milder and rounder in taste than tartaric or malic acid and can be dosed precisely.
Before fermentation, stir the acid into the must in small steps and check with an acid test kit until you reach the desired value. That way you avoid over-acidifying. The exact dosage is stated in the package instructions.

- Dosage: according to the pack, 1.25 g of 80 % lactic acid raises the total acidity by 1 g/l. The correct figure is 1.5 g, i.e. 1.25 ml (total acidity expressed as tartaric acid); the pack probably confuses grams and millilitres.
