Auriva is a pure-culture wine yeast for batches high in sugar. With mead, Auslese and ice wine, the yeast has to work against high sugar concentrations and still ferment cleanly. This strain is made exactly for that; it also copes well with oenological stress.
The pack contains 5 g of dry pure-culture yeast and is enough for 10 to 50 litres of must. The alcohol tolerance is around 10 vol.-%, and work is done rather cool, roughly between 10 and 20 °C. Before use, let the yeast swell in ten times the amount of water and then add it to the fermentation vessel, avoiding strong temperature fluctuations. Details are in the packaging instructions.
