Potassium metabisulphite (E224) is the standard tool when you want to protect your wine from oxidation and unwanted microorganisms. The Wineguard powder from Joenos contains 50 % active SO2, so you only need small amounts.
The 10 g sachet suits hobby batches. Important: store it dry and tightly sealed, because potassium metabisulphite draws moisture and then loses its effect. If you want to work very precisely, weigh it out with a fine scale; the dosage follows the package instructions.
Honestly: if your wine is drunk young and quickly, you can often manage without sulphuring. If it is meant to age, potassium metabisulphite belongs in the cellar.
- Contents: 10 g potassium metabisulphite (E224), 50 % active SO2
- Enough for: several hobby batches, dosage as per package instructions
- Use: dissolve only in a little cold water in a separate glass, then stir in (never dissolve in must, wine or juice, as they are acidic too); protects against oxidation and stabilises the wine
- Brand: Joenos, Made in Germany
Manufacturer's information:
- Further uses: sterilisation of equipment, corks and bottles, as a barrier liquid for airlocks and for making a potassium metabisulfite solution of about 2 % (about 1 % SO₂)
- Airlock barrier liquid: plain water during fermentation; for storage, dissolve 1 g in 50 ml of water (large airlock: 2 g in 100 ml), without acid. This gives a potassium metabisulfite solution of about 2 %, i.e. about 1 % SO₂. Never let potassium metabisulfite come into contact with acid, not even in the same container: toxic gas is released.
- Active substance potassium metabisulphite (E224): CAS no. 16731-55-8, EC no. 240-795-3
