An airlock sits on the fermentation vessel and lets the carbon dioxide produced during fermentation escape while keeping out air, dust and fruit flies. The bubbling does not reliably show whether fermentation has finished, though; confirm the end of fermentation with the Oechsle hydrometer.
This universal airlock Hobby 1 comes from the range of the traditional Kitzingen company (Arauner, Kitzingen) and is part of the original remaining stock that we continue to carry. Fit it with a suitable bung on the demijohn or fermentation vessel; make sure bung and airlock match. During fermentation, fill it with plain water. If the wine then stays in the vessel for longer, use 1 g of potassium metabisulfite in 50 ml of water, without acid, as the barrier liquid.
