Empty wooden barrels are a paradise for mold and acetic acid bacteria. Sulfur wicks are the classic way to prevent this: burned inside the barrel, the sulfur dioxide produced disinfects the interior and neutralizes odors.

These wicks do not drip and burn evenly, so no melted sulfur ends up at the bottom of the barrel. Beekeepers also use them for the hygiene of beehives.

You do not need this if you only ferment in demijohns or plastic containers, which you clean with water. For a wooden barrel, on the other hand, sulfur wicks are part of the basic equipment in the cellar.

Caution: when sulphuring, a naked flame burns and sulphur dioxide rises from the bunghole. The gas is toxic and strongly irritates the eyes and airways. Work with the door and window open, never lean over the bunghole and keep anything flammable away from the barrel. People with asthma should leave this job to others. Never burn sulphur wicks in stainless steel or plastic containers. The information on the product label must always be followed.
