Thiamine, also known as vitamin B1, is a nutrient that yeasts need for a quick fermentation start and a stable fermentation. If there is too little of it in the must, fermentation can get off to a sluggish start. A targeted addition usually helps the yeast get fermentation started.
Add the vitamin B1 to the prepared must at the start of fermentation, ideally together with a yeast nutrient salt. How much is needed depends on the batch and quantity; the exact dosage is stated on the package. The 6 g portion is designed for targeted use in individual batches.
- Contents: 6 g vitamin B1 (thiamine)
- Suitable for: supporting fermentation start and fermentation progress
- Use: dissolve 0.5 g in 500 ml of cold water, add 6 ml of it per 10 litres (15 ml per 25 litres) together with the yeast and discard the rest; not together with potassium metabisulfite, because sulfite breaks down thiamine
