Vina pure culture yeasts are liquid yeast cultures from the Hefereinzucht Schlag in Aalen, filled in a small bottle. One pack is measured for 50 litres of must or mash. Pure culture yeast means a selected strain does the work instead of the wild yeasts from the fruit, so fermentation starts reliably and runs cleanly.
Choose the strain that suits your wine above. All strains come in the red Vina box with a small bottle, only the cold fermentation yeast comes in the green one.
The strains
- Steinberg: Steinberg is a classic among pure culture yeasts: versatile for white and fruit wines, with a clean, rather neutral fermentation. That keeps the aroma of your grapes and fruit in the foreground.
- Rüdesheim: The Rüdesheim strain is named after the wine village in the Rheingau and is meant for fresh, fruity white wines and light fruit wines.
- Weinsberg: The Weinsberg strain is named after the wine town in Württemberg, a robust yeast for white and fruit wines.
- Bernkastel: The Bernkastel strain is named after the wine village on the Moselle and is meant for light, fruity white wines.
- Deidesheim: The Deidesheim strain is named after the wine village in the Palatinate and is meant for strong, full-bodied white wines.
- Aßmannshausen: The Aßmannshausen strain is named after the red wine village in the Rheingau and is meant for red wines and dark berry wines.
- Burgundy: The Burgundy yeast is meant for red wines in the Burgundian style and for dark berry wines.
- Bordeaux: The Bordeaux yeast is meant for strong red wines and for dark fruit and berry wines.
- Malaga: The Malaga yeast is meant for sweet, heavy dessert wines with a higher alcohol content.
- Tokay: The Tokay yeast is meant for sweet, aromatic dessert wines.
- Port: The Port yeast is meant for strong, sweet wines in the port style.
- Sherry: The Sherry yeast is meant for sherry-style wines, dry to off-dry with nutty notes.
- Champagne: The Champagne yeast is the classic yeast for sparkling wine and ferments cleanly and evenly.
- Cold fermentation: This yeast is made for fermentations at low temperatures, for example in a cool cellar in late autumn. Wines fermented cool keep more fruit and freshness.
- Distilling mash: This yeast is meant for fruit mashes that will be distilled later. It ferments the sugar thoroughly so that the mash holds as much alcohol as possible.
