If the must has too little acidity, the finished wine tastes flat and is less stable. Lactic acid raises the total acidity and does so more gently than a pure tartaric acid correction; it tends to round out the must rather than make it sharp.

This lactic acid is highly concentrated at 80 %, so you dose it sparingly. First measure the total acidity of your must, then you know how far you need to correct. The 1-litre bottle is enough for larger quantities or many batches. Acidifying is subject to legal requirements; dose according to the measured value and the package instructions.

  • Dosage: according to the pack, 1.25 g of 80 % lactic acid raises the total acidity by 1 g/l. The correct figure is 1.5 g, i.e. 1.25 ml (total acidity expressed as tartaric acid); the pack probably confuses grams and millilitres.
