Silica sol is a mineral, negatively charged fining agent made of amorphous silica for musts, juices and wines; it is not silica sol but kieselguhr that comes from diatoms. It helps to bind cloudiness and make the wine clearer. It becomes particularly effective in combination with a positively charged partner such as gelatine or pea protein, where it markedly improves the fining effect.
As a guide value, about 5 ml per 10 litres of wine is enough. Silica sol at 15% is stirred in undiluted; if needed you then add gelatine (0.5 to 1 g per 10 l) or pea protein. This two-component fining works especially well with apple and grape wines. Set the exact dosage according to the package instructions.
