The Combi Salts cover several small tasks in the cellar. The sulphur powder (potassium metabisulfite) serves as a barrier liquid in the airlock during storage, helps with germ-free work and protects against oxidation at the end of fermentation; the citric acid is for acidifying batches. Use the two salts separately: never mix potassium metabisulfite with an acid, not even in the same container, otherwise toxic gas is released.
The pack contains 30 g, split into sulphur powder and citric acid. Set the right amount according to the particular use and the package instructions. You should handle sulphur powder carefully and sparingly, work in a well-ventilated environment and stick to the stated dosage.

- Airlock barrier liquid: plain water during fermentation; for storage, dissolve 1 g in 50 ml of water (large airlock: 2 g in 100 ml), without acid. This gives a potassium metabisulfite solution of about 2 %, i.e. about 1 % SO₂. Never let potassium metabisulfite come into contact with acid, not even in the same container: toxic gas is released.
