Blue lye is the reagent you use to determine the total acidity in must and wine. It is used together with the Kitzinger acidometer glass cylinder and makes the acidity visible through a color change.
To do this, you fill the cylinder up to the zero mark with your sample and add blue lye drop by drop until the color changes to dark green. Read the value on the scale at eye level. Dilute very dark juices beforehand and factor in the dilution ratio. Handle the lye carefully and avoid contact with skin and eyes.
