If your must has too little acid, the finished wine will taste flat and be more prone to spoilage. Lactic acid raises the total acidity and rounds things off more softly than a pure tartaric acid correction, instead of making the wine sharp.
This lactic acid is highly concentrated at 80 % and comes in a 1 liter bulk pack, ideal if you are acidifying larger quantities. In liquid form it can be dosed precisely. Measure the total acidity first so you know how much correction is needed; base the addition on this value and the package instructions. Acidification is subject to legal regulations, so handle the acid carefully.

- Dosage: according to the pack, 1.25 g of 80 % lactic acid raises the total acidity by 1 g/l. The correct figure is 1.5 g, i.e. 1.25 ml (total acidity expressed as tartaric acid); the pack probably confuses grams and millilitres.
