Arausan is a sulfur preparation from the Kitzinger range for stabilizing wine after fermentation. It prevents wine faults and protects the young wine from oxidation and unwanted microbes, so color and aroma are preserved. As a guide value, the manufacturer states 1 g per 10 liters of wine.

Arausan can also be used to preserve the color of peeled fruit and vegetables, such as apples, pears, apricots or celery, which are briefly dipped in a 0,5 to 1 percent SO2 solution and then processed further. The sachet contents are not intended for direct consumption, so work carefully and dose precisely.

Manufacturer information:

  • Active ingredient: potassium disulfite (E224), portioned in 10 x 1 g
  • Airlock barrier liquid: plain water during fermentation; for storage, dissolve 1 g in 50 ml of water (large airlock: 2 g in 100 ml), without acid. This gives a potassium metabisulfite solution of about 2 %, i.e. about 1 % SO₂. Never let potassium metabisulfite come into contact with acid, not even in the same container: toxic gas is released.
