The Combi Salts are a set of 2 x 10 g sulfur powder (potassium metabisulfite) and 10 g citric acid. Use them separately: the sulfur powder protects beverages against oxidation and unwanted microorganisms, the citric acid is for acidifying batches. Never mix potassium metabisulfite with an acid, not even in the same container: toxic gas is released.

As barrier liquid in the airlock, use plain water during fermentation; for storage, dissolve 1 g of sulfur powder in 50 ml of water, without acid (about 1 % SO₂). It is best to refresh the barrier liquid in the airlock every six to eight weeks. The only exception where the two salts are deliberately combined is the wet storage of an empty wooden barrel: dissolve them separately, add them one after the other to the barrel filled three quarters with water, work with the door open and wearing safety goggles, and do not lean over the bunghole. Follow the exact instructions on the package.
