Lactic acid is used to raise the acidity of fruit mashes, must and wine in a targeted way. It acts more gently than a pure tartaric acid correction and helps bring the pH into the range where the batch stays stable and ferments cleanly.

This version is highly concentrated at 80 % and is supplied in a 1 liter bottle (around 1.2 kg). Measure the acidity before correcting, so you dose deliberately rather than by guesswork. Acidification is subject to legal regulations; stick to the measured value and the package instructions and handle the acid carefully.

  • Dosage: according to the pack, 1.25 g of 80 % lactic acid raises the total acidity by 1 g/l. The correct figure is 1.5 g, i.e. 1.25 ml (total acidity expressed as tartaric acid); the pack probably confuses grams and millilitres.
