This sulfur powder (potassium pyrosulfite, KDS) is the bulk size for anyone who sulfites regularly: 1 kg of white powder for sulfiting mashes, musts and wines, also suitable for mead (vinegar batches are not sulphured). It protects against oxidation and unwanted microorganisms and thus safeguards the shelf life of your batches.
To use it, dissolve the powder in 10 times the amount of cold drinking water in a separate container and add the solution to the fermentation vessel – never dissolve it in must, wine or juice, as they are acidic too. Potassium pyrosulfite requires careful handling: it causes serious eye damage and develops toxic gases on contact with acids. Wear protective gloves and eye protection, keep the powder away from acids and store it cool, dry and tightly sealed. Use up promptly once opened.

- Airlock barrier liquid: plain water during fermentation; for storage, dissolve 1 g in 50 ml of water (large airlock: 2 g in 100 ml), without acid. This gives a potassium metabisulfite solution of about 2 %, i.e. about 1 % SO₂. Never let potassium metabisulfite come into contact with acid, not even in the same container: toxic gas is released.
