Potassium disulfite (E224) is a proven preservative that protects the color and shelf life of many foods. This 1 g portion is precisely weighed and is suitable for applications with a small, targeted amount.
According to the manufacturer, the powder is intended for foods with restricted use, such as dried fruit, shredded horseradish, dried vegetables and potato products. It is the same substance also used for sulfiting wine and must. Apply it carefully, comply with the applicable food law requirements and observe the notes on the packaging. - Strongly hygroscopic - use up opened packs immediately
- Airlock barrier liquid: plain water during fermentation; for storage, dissolve 1 g in 50 ml of water (large airlock: 2 g in 100 ml), without acid. This gives a potassium metabisulfite solution of about 2 %, i.e. about 1 % SO₂. Never let potassium metabisulfite come into contact with acid, not even in the same container: toxic gas is released.
