The 1 kg pack of gelatin is the stock size for everyone who fines regularly: gelatin clarifies grape wine, fruit wine and mead by binding haze particles, and also serves for tannin correction when a wine has turned out too harsh.
As an animal protein, gelatin reacts with tannins and haze particles, which then settle as sediment at the bottom; afterwards you simply rack off the clear wine. Dose sparingly and according to the package instructions. For tannin correction, a preliminary trial with a small quantity is worthwhile before treating the whole batch, so you hit the desired effect more precisely. The product is not vegan.
- Contents: 1 kg gelatin
- Suitable for: grape wine, fruit wine and mead
- Effect: clarification, fining and tannin correction
- Use: dosage as per package instructions, preliminary trial recommended
- Brand: Arauner Kitzinger
Manufacturer information:
- Dosage for mash/red wine with heavy haze: 2-6 g per 10 l (20-60 g/100 l)
- Dosage for white wine: approx. 10 g per 100 l + 100 ml kieselsol; with 15 % kieselsol this is a ratio of 1:10 (the often quoted 1:5 applies to 30 % kieselsol)
- Dissolve in 10 times the amount of drinking water
- Order of fining: for tannin-rich wines first gelatine, then kieselsol; for low-tannin wines first kieselsol, then gelatine; a preliminary trial decides; tannin correction: first isinglass, then gelatin
