The distiller's mash dried pure-culture yeast is a highly active yeast for difficult fermentation conditions. It is the right choice for stuck fermentation, for restarting a stalled fermentation, for spontaneous fermentations and for high-alcohol mashes. It ferments slowly but steadily, even when little glucose is present or the alcohol content is already high.
The yeast works neutrally and barely affects the aroma, and it also has little tendency toward sulfurous off-flavors. This makes it suitable for restarting sluggish or stuck fermentations of fruit and grape wine. The 5 g portion is enough for 10 to 50 liters. Rehydrate and bring to temperature before adding; the exact dosage is on the packaging.
