Sulfur protects your wine from oxidation and unwanted microbes – but only the free portion is still at work. That is exactly what this set measures. If you sulfite without measuring, you either dose too little and risk the wine turning, or too generously and taste it later in the glass.
The determination takes just a few minutes: pour the wine sample into the measuring cylinder, add iodine solution drop by drop until the color changes, read off the amount used. The result tells you in milligrams per liter how much free sulfurous acid is still in the wine. Before bottling, all wines should have 30 to 40 mg/l of genuine free SO₂; with red wine the iodine test usually reads 10 to 15 mg/l too high, so subtract that amount from the reading.
It makes sense to measure before bottling and then about every three months during storage – the value drops by itself over time.
