From a meadow orchard, a few hundredweight of apples and pears quickly add up. The meadow orchard set is intended for barrels and large demijohns: it contains yeast, enzyme, nutrient salt and sulfur for up to 200 liters of apple wine or cider, in pack sizes that match this quantity.

The four packets of Cider Fresh ferment apple and pear juice fresh and fruity; according to the manufacturer, the yeast works at 12 to 20 °C and ferments vigorously even below 15 °C, just right for a cool autumn cellar. One packet is enough for 10 to 50 liters: for 200 liters you use one packet per 50 liters, which is the upper limit; if you calculate 25 liters per packet, the yeast is enough for 100 liters. You stir in the anti-gelling agent after crushing, so that the mash breaks down better and you get more juice; it works faster in warmth and is destroyed above about 55 °C. For the yeast nutrient salt, the manufacturer specifies 50 to 100 g per 100 liters; for apple wine and must 2 g per 10 liters is enough, i.e. 40 g for 200 liters, at most 3 g per 10 liters (60 g for 200 liters, the upper limit of the German guidelines for wine-like drinks); the rest is kept in reserve.

  • 4 × Joenos Wine Yeast Cider Fresh, 5 g for cider & apple wine (Item no. SKU-100247): one packet for every 25 to 50 liters of juice, ferments at 12 to 20 °C according to the manufacturer.
  • 1 × Joenos Anti-Gelling Agent, 500 ml Enzyme for Higher Juice Yield (Item no. SKU-100977): enzyme preparation for breaking down pectin in the fruit mash before pressing, dosage according to the package instructions.
  • 1 × Joenos Yeast Nutrient Salt (Fermentation Salt), 1 kg Pure DAP for Yeast Nutrition (Item no. SKU-103364): pure DAP in a resealable bag, dissolve in 10 times the amount of must or water, 50 to 100 g per 100 liters.
  • 1 × Joenos Wineguard Sulphur Powder KDS, 10 x 10 g Sachets for Wine Preservation (Item no. SKU-103598): ten individually packed 10 g sachets of potassium disulfite for juices, young wines and racking off the yeast.

The sulfur powder is portioned into ten sachets, so the rest stays sealed until the next use; it is dosed according to the package instructions. Not included are fruit, mill and press, barrel or fermentation vessel, and airlocks. The set is intended for fermenting apple and pear must.
